INGREDIENTS

250g pumpkin, steamed, drained and cooled
250g spinneysFOOD Sweet Potatoes, steamed, drained and cooled
2 large eggs, beaten
160g cake flour
1 tbsp baking powder
1 tsp spinneysFOOD Salt
50g salted butter, for frying

To serve

105g coconut sugar
1 tsp spinneysFOOD Fine Cinnamon

METHOD

    Mash the pumpkin and sweet potatoes until smooth.

    Add the eggs, flour, baking powder and salt.

  • 3

    Heat a non-stick pan over a medium heat and add the butter.

  • 4

    Drop tablespoonfuls of the batter into the pan, allowing enough room to spread. Cook for 3-4 minutes per side.

  • 5

    To serve, combine the coconut sugar and cinnamon and sprinkle over the warm fritters.
