INGREDIENTS

For the marinated cucumbers

6 small spinneysFOOD Cucumbers, chopped into chunks
spinneysFOOD Sea Salt Flakes

For the dressing

2 garlic cloves, crushed
Zest and juice of 1 lime
2 tsp rice vinegar
1 tsp soya sauce
1 tsp sesame oil
Thumb-sized piece of ginger, peeled and finely chopped
2 spinneysFOOD Spring Onions, chopped
2 spinneysFOOD Red Chillies, seeded and chopped
20g spinneysFOOD Fresh Coriander, chopped
4 ripe peaches, pitted and quartered
spinneysFOOD White Sesame Seeds, for sprinkling

METHOD

    Toss the cucumber with the salt and stand for 10 minutes, strain the liquid and set aside.

    To make the dressing, mix the garlic, lime zest and juice, vinegar, soya sauce, sesame oil, ginger, spring onions and chillies together and toss the cucumber in the dressing.

    To serve, arrange the cucumber, coriander and peaches on a platter, sprinkle with sesame seeds and drizzle with the extra dressing.
