For the lemon and maple vinaigrette
Remove the stems of the spinach leaves.
Mix the rest of the ingredients and the spinach, except the peach, in a medium-sized bowl.
Cut the peach into slices. Place the slices on a flat top grill after drizzling it with some olive oil.
Meanwhile assemble all the ingredients for the vinaigrette in a small bowl and whisk for 1 minute.
Flip the peaches once slightly charred and cook on the other side for the same amount of time.
Add the grilled peaches to the leaf mix and drizzle with the vinaigrette. Toss through, then serve.
