Place a plate of your choice inside the freezer to get ice cold.
Put the açaí, almond milk, maple syrup and vanilla seeds in a blender and blitz until smooth.
Scrap out all contents into a metal tray and place it in the freezer and stir every 20 minutes. After 1 or 2 hours it will take on an ice-cream like consistency. Remove the plate from the freezer and place the açaí in and smooth the top.
Arrange the fruits and granola as per choice. Serve immediately.
