INGREDIENTS

Juice and zest of 1 orange
100g dried fruit cake mix
2 large eggs
200g soft brown sugar
180ml vegetable, sunflower or canola oil
210g cake flour
1 tsp bicarbonate of soda
1 tsp spinneysFOOD FIne Cinnamon
1/2 tsp mixed spice, ground
1/2 tsp cloves, ground
1/2 tsp nutmeg, ground
A pinch of spinneysFOOD Salt
200ml applesauce (tinned)

For the frosting

50g salted butter, melted
20g soft brown sugar
1 tsp almond extract (or vanilla)
300g spinneysFOOD Super Fine Icing Sugar, sifted
40ml boiling water

To serve

Edible gold dust and marzipan stars, for decorating

METHOD

    Preheat the oven to 180°C, gas mark 4.

    Heat the orange juice and zest in the microwave and add to the dried fruit cake mix. Allow to steep.

    Meanwhile, beat the eggs and sugar in a mixer fitted with the whisk attachment until light - about 5 minutes. Add the rest of the ingredients and mix well. Finally, add the soaked fruit.

    Spoon into a greased 12-hole doughnut pan, filling it two-thirds full. Bake in the preheated oven for 10-15 minutes or until cooked through and springy to the touch.

    Remove from the oven, allow to cool slightly in the tin before turning out. Wash, dry and re-grease the pan and bake the remaining batter.

    To make the frosting, combine the butter, brown sugar, almond extract and icing sugar and gradually add the boiling water to form a thick frosting.

    Dip the doughnuts into the frosting and allow to set on a cooling rack.

    Serve with marzipan stars and edible gold dust.
