In a large bowl, mix the coconut milk and yoghurt. Set aside.
Add chia seeds and mix well. Let the chia seeds absorb the coconut milk mixture for 10-15 minutes before placing into serving bowls or glasses.
Before serving, top with mixed berries, a drizzle of manuka honey and a sprinkle of desiccated coconut flakes.
"With their healthy omega 3 fats, fibre and anti-oxidants, chia seeds are a nutrition powerhouse. This recipe is a great alternative to sweet, sugary desserts. It also works very well as a breakfast dish," says Freda Molamphy, Spinneys Nutritionist.
