This mixed citrus peel-flavoured syrup will keep merrily for months in the refrigerator. Just top with ice and soda when guests come over unannounced

200g spinneysFOOD Fine Grain White Sugar
200ml water
Zest and juice of 1 lemon
Zest and juice of 1 lime
Zest and juice of 1 grapefruit
2 sprigs of spinneysFOOD Fresh Thyme, plus extra to garnish
Ice, to serve
2L soda water, for topping up

    Place the sugar, water, citrus zest and thyme in a medium saucepan and stir gently over a low heat until the sugar has dissolved. Bring to a boil and allow to simmer for 1 minute. Remove from the heat and allow to cool completely. Strain the syrup through a sieve to remove the thyme and zest then stir in the citrus juices

    Divide the syrup between 4 glasses, add 2 ice blocks and top up with soda water. Serve immediately
