Grilled Vegetable and Halloumi Skewers

Mildly salty halloumi cheese when strung together with other veggies on a skewer and grilled makes for a great vegetarian appetiser

INGREDIENTS

400g halloumi cheese, cut into 2cm cubes
1 red pepper, seeded and cut into 2cm cubes
1 yellow pepper, seeded and cut into 2cm cubes
1 red onion, cut into 2cm cubes
4 courgettes, cut into 2cm cubes
2 garlic cloves, crushed
2 tbsp olive oil
3 tbsp spinneysFOOD Fresh Parsley, roughly chopped
1 tbsp spinneysFOOD Balsamic Vinegar of Modena, for drizzling

METHOD

    Soak 12 wooden skewers in water for at least 15 minutes.

    Thread the halloumi, peppers, onion and courgettes onto the skewers.

    Combine the garlic, olive oil, parsley and vinegar and mix well.

    Brush the skewers with the marinade then place over medium-hot coals, turning every 2-3 minutes, or until cooked – about 5-8 minutes in total.

    Serve with extra marinade drizzled over.
