6 ears of corn
3 garlic cloves, crushed
3 tbsp mayonnaise
50g Parmesan cheese, grated
2 limes, zested and juiced
1 jalapeño, seeded and chopped
A handful of spinneysFOOD Fresh Coriander, chopped
spinneysFOOD Salt, to season
spinneysFOOD Whole Black Pepper, freshly ground, to season

    Place the corn on a grid over medium-hot coals and char until softened – for about 15 minutes. Make sure you turn the corn regularly.

    Remove from the heat and slice the kernels off the cob.

    Place the kernels into a large bowl and add the rest of the ingredients. Mix well and serve.
