This simple, crudo-style dish works well with any white fish. Use yellowtail if sea bass is not available.

INGREDIENTS

100ml soya sauce
100ml ponzu
3 1/2 tbsp mirin
1 1/2 tbsp truffle oil
100g fresh sea bass fillet, skinless
spinneysFOOD Micro Greens, for garnishing (optional)

METHOD

    Pour the soya sauce, ponzu, mirin and truffle oil into a bottle and shake well

    Slice the sea bass into small, thin pieces

  • 3

    Serve the sliced sea bass on a flat plate and drizzle generously with the sauce

    Garnish with the micro greens, if using
