For the gazpacho

840g (about 6) spinneysFOOD Organic Cucumbers, rinsed
3 spring onions, finely sliced
2 cloves garlic, finely sliced
2 green chillies, deseeded and sliced
40g spinneysFOOD Fresh Basil, roughly torn
20g fresh rocket
20g spinneysFOOD Fresh Mint
625ml spinneysFOOD Bottled Drinking Water
spinneysFOOD Sea Salt, to taste
Cracked spinneysFOOD Black Peppercorns, to taste

To serve, quantities as desired

Olive oil
spinneysFOOD Fresh Basil
spinneysFOOD Organic Cucumber, cubed
Cracked spinneysFOOD Black Peppercorns

    Place all the ingredients in the jug of a blender and blitz until smooth. Season to taste

    Refrigerate for at least 1 hour, or overnight, to let the flavours settle

    When ready to serve, generously drizzle with olive oil and garnish with rocket, basil, cucumber and cracked black peppercorns
