INGREDIENTS

6 spinneysFOOD Chicken Sausages
4 potato waffles
2 Portobello mushrooms
1 tbsp olive oil
415g baked beans
1 tbsp hot sauce, such as sriracha
4 eggs

For the crispy kale

100g spinneysFOOD Organic Green Kale, shredded
1 tbsp spinneysFOOD Sunflower Oil
½ tsp spinneysFOOD Sea Salt
¼ tsp spinneysFOOD Extra Fine Caster Sugar
1 tsp spinneysFOOD White Sesame Seeds

METHOD

    1 Preheat the oven to 180°C, gas mark 4

    Place the chicken sausages, potato waffles and mushrooms on a lined baking tray. Drizzle the sausages and mushrooms with olive oil and season with a pinch of salt. Roast in the oven, on the top shelf, for 25 minutes

    Place the kale on a second lined baking tray, drizzle with sunflower oil and sprinkle with salt, sugar and the sesame seeds. Using your hands, toss the kale until all the leaves are coated in oil. Roast it in the oven, on the bottom shelf, for 20 minutes

    Heat the beans and the hot sauce in a small pan for 3-4 minutes until piping hot

    Fry the eggs to your liking

    Serve the spicy beans, waffles, sausages, crispy kale, Portobello mushrooms and fried eggs alongside each other, in traditional fry-up style
