Palm's Elixir

For a refreshing drink on a sunny day, try this exotic mocktail that combines the citrus-sweet flavour of pineapple with smoked tea

10ml fresh lime juice
10ml pineapple cordial
90ml fresh pineapple juice
60ml Assam and lapsang souchong tea (or any smoked tea variety, as the leaves are traditionally smoke-dried over pinewood fires, imparting a distinctive flavour of smoky pine)
20ml spicy date syrup
1 scoop of ice

To serve

Ice cubes, as desired
Dehydrated pineapple, for garnishing
1 slice dark baking chocolate, for garnishing

    In a shaker, add all the ingredients and the ice and shake well

    Strain the mixture through a sieve and serve in a tumbler with ice cubes

    Garnish with dehydrated pineapple and the chocolate, and serve immediately


Top Tip: Using clear or clarified lime juice for your mocktail will give you a cleaner taste, a lighter and smoother texture, less bitterness, and your drink won’t cloud up when stirred. To make this at home, set a fine mesh strainer over a bowl, line the strainer with a coffee filter, and pour your lime juice over this, allowing it to filter through.
