Black Forest Pancakes with Cherry & Almond Compote

850g cherries in syrup
3 tsp almond extract
2 tbsp cornflour
200g plain flour, sifted
40g cocoa powder, sifted
1 tbsp baking powder
60g spinneysFood Caster Sugar
2 spinneysFood Free Range Eggs, beaten
300ml milk
50g butter, melted
100g dark chocolate, finely chopped
ice cream, to serve

    Put the cherries and the almond extract in a pan set over a medium heat and bring to a gentle simmer

    Mix the cornflour and 50ml hot cherry syrup. Add to the pan, stir until thickened, then remove from the heat. Keep warm until ready to serve

    Combine the flour, cocoa, baking powder, sugar and a pinch of salt in a bowl

    Whisk together the eggs, milk and 25g butter. Beat into the flour mixture, until smooth. Stir in the chocolate, then rest the batter for 30 minutes

    Set a frying pan with 1 tsp butter over a medium heat. Add one-eighth of the batter, using an 11cm cutter to shape the pancake, if you like. Cook for 3 minutes, flipping halfway. Keep warm while you cook the remaining pancakes

    Serve the pancakes with the cherry compote and scoops of ice cream
